Soy Basil Lime Baked Chicken

This baked chicken has a delicious and versatile flavor created with soy sauce, a generous amount of basil and a squeeze of lime. I sometimes make a large batch and keep it in the refrigerator for a week’s worth of meals. It can be used as a salad topper, added to a quick weeknight pasta or eaten as its own main dish with a side of steamed veggies and rice.

Ingredients:

  • chicken breast
  • soy sauce
  • fresh lime
  • dried basil
  • red pepper
  • black pepper
  • cumin
  • onion powder

Instructions:

  1. Preheat oven to 350 degrees.
  2. Place the chicken breasts in a glass baking dish. Sprinkle with all ingredients. Be generous with everything except the red pepper – unless you like it spicy.
  3. Bake 25-30 minutes or until cooked through.

Sometimes I dish it right up into lunch-sized containers. This week, I paired it with lightly steamed broccoli that I drizzled with fresh lime juice and a sprinkle of salt. I also keep it ready to go for salads and pastas.
